hey guys we're back and today we're
going to be smoking 100 lb of brisket
for the homeless today we got a
different video plan we have a bunch of brisket
brisket
we got vegetables and potatoes and we
have this new smoker over here so let's
start smoking up all this brisket okay
first things first let's start trimming
up the brisket we have a nice electric
smoker today we're going to be testing
it out and cooking up this
brisket let's start trimming it up we're
trying to trim off the fat you don't
want the brisket too fatty you kind of
want to trim off like half in
just get it nice and trimmed make sure
though get all that silver skin off all
that fat that you don't need you just
want to leave on a little bit of fat and
that's it and we're going to trim off
the outer a little
bit this is super fatty right here see
all this fat fat that's why we're
trimming it up let's get this side get
all that unnecessary fat
off make sure you have a sharp knife
this is all fat that you don't need and
we made sure to wash the table really
good before trimming on it beef you
don't need to wash guys it's unnecessary
when you smoke it or cook it it kills
all the
bacteria it just spreads bacteria if you
wash it in the kitchen so you don't want
to do that chicken or beef you're not
supposed to [Music]

wash and any brisket we cut off we're
going to be reusing this we're going to
be making beef Tallow and other things
with it so we're not worried about the
trimmings same with this part right here
it's a little bit too thin so we're just
okay guys we trimmed up this brisket
it's nice and
beautiful both sides you still want a
little bit of fat on there we're going
to be right back when we got these three
briskets trimmed up as well and we're
ready to season everything okay guys we
finally trimmed up all the brisket
they look absolutely beautiful we left a
little bit of fat on there you don't
want to trim all the fat off because the
fat will still make it nice and juicy
but you don't need too much okay first
let's add a little bit of
mustard this is going to be our binder
right here you're not going to even
taste it on the
mustard and like I said guys you're not
going to even taste the mustard this is
just to bind all our seasonings on the
brisket really
nice it's going to get all the seasoning
there now we got some prime rib
seasoning this has a bunch of different
herbs and spices in here saw a bunch of
here these are thick pieces of brisket
so you can add a good amount of seasoning
now we got some garlic
powder this doesn't only have garlic
powder in there it has a bunch of
different things in here it has parsley
things now we got some allpurpose meat
seasoning right here this is some good
stuff as well it has a bunch of
here now we have just a little bit of
smoked paprika just a little bit this is
taste and a tiny bit of salt just a
little bit the seasonings already
contain salt in them Pat it
down and and [Music]

flip and let's repeat the same [Music]

down okay we're just going to let this
sit for around 30 minutes before we put
it into the smoker you don't want to
season this overnight because it will
get dry we want this as juicy as
possible so we're just going to let it
sit for 30 minutes minutes and put it in
the smoker right away okay it's been 30
minutes it's time to throw the brisket
in the smoker first let's set the timer
to 10 hours we're going to be smoking
our brisket for 10 hours we're setting
235 we set it to 235 now let's set the
timer to 10
okay now let's load in our wood chips
this is peacon wood chips it's really
good okay let's load the chips into the [Music]
smoker okay let's put it in the smoker
just like
this and it's ready to start smoking
okay now let's open up our smoker
now let's grab a piece of
brisket just like
that and let's close
it boom that's perfect right there let's
smoker okay nice let's grab this one [Music]
okay and it's ready to smoke okay guys
while our smoker is heating up let's add
juice first let's add in a little bit of apple
apple
juice this is going to make sure our
brisket stays nice and juicy now let's
now let's add in some wasure
sauce a little bit of apple cider
seasoning mix a little
smoker this is going to make sure our
up every couple hours make sure you
spray the brisket with apple juice a
just get the dry parts so everything
juicy and just let this smoke and we're
making sure to add in wood chips the
smoker every single hour so there's a
smoker okay guys the brisket is finally
done it's been smoking for around 14
hours we're about to finish it off in
the oven so let's start preparing okay
we rendered our fat from the beef
brisket that we trimmed down earlier we
have this homemade beef toallow right here
here
it's beautiful plus we couldn't find any
at the store so we decided to make some
ourselves look at this guys homemade
rendered beef
Tallow now let's grab our homemade beef
Tallow and let's put it all over this
foil some people like using butcher's
paper but I'm using foil foil keeps it
more juicy plus we're going to finish it
off in the oven so no smoke is going to
be penetrating anyways we're going to be
baking in our oven around for 3 hours
internal okay now we're ready to take
smoker like I said guys we've been
hours let's take the first brisket out
look at this
guys this turn out
beautiful nice bark on it still juicy
from all the spritzing we did and from
the juice we put inside this is exactly
how you want to smoke brisket right here
it's still not done we're going to be
cooking this in the oven for around 3
well I'm surprised we managed to fit all
this brisket in here nice bark on it
beautiful and let's take out the last one
one [Music]

this one's beautiful this is how you
like now let's grab our homemade beef
Tallow and we rendered this beef Tallow
from the brisket so this is going to
here this is how you make make sure you
have a nice and juicy
brisket it's going to turn out really
juicy and tender this one looks amazing right
here okay now let's wrap it up [Music]
wrap it up nice and tight and you can
needed wrap it
tight okay guys let's wrap the final one
make sure you wrap it good so all the
inside you can use as much foil as need [Music]

needed okay now we're going to throw
these in the oven for at least 3 hours
or until 200° internal okay while the
brisket finishes cooking up in the oven
let's start making the vegetables first
let's put down a little bit of olive oil
potatoes now we have this special
seasoning right here it contains a bunch
of different herbs and spices there's a
bunch of different things in here this
is some good stuff right here just pour
over now let's add garlic powder to
both okay a little bit right here we
made sure to boil the vegetables and
potatoes so they get nice and soft
that's a secret little hack to do before
you cook it up so the vegetables are
nice and soft now let's add some black
pepper to [Music]
both and to this one let's add some
buttery garlic and herb [Music]

seasoning and I almost forgot let's add
a little bit of paprika to both this is smoked
paprika okay now let's
mix mix very lightly we boiled the
potatoes a little bit before we're going

vegetables make sure you mix these soft
as well because these are precooked okay
now we're ready to start cooking it up

bit okay let's add our seasoned
vegetables we just want a nice little
Char on them and that's it they're already
precooked a little bit of garlic powder on
on
pepper okay guys the vegetables are
about done we got a nice little Char on

done nice little CH on them and that's it
okay let's cook the potatoes
griddle spread them
out mix them up a little
bit get all those seasonings mixed up in the
the
potatoes the smell coming off of this is
absolutely amazing you can really smell
herbs light little Char on them and
they're done okay the potatoes are done [Music]

okay the potatoes are all done we're
going to be right back when we're ready
to take the brisket out of the oven okay
guys it's time it's been 17 hours we
smoked the brisket for 14 hours and put
it into the oven for 3 hours so let's
cut it open let's unwrap the present
this took so long right here we made
sure to get it to
195 to 203 that makes sure it's really
tender look at this
guys it's be
beautiful nice bark on it you can see it's
it's
juicy okay let's take it out now let's
cut into [Music]

it oh my goodness
guys we're going to cut right in the [Music]

middle this is what you call a juicy
brisket right here it's nice and juicy
it's super tender this is literally
perfect right here guys just the juice pouring
pouring
out okay let's cut it now man it just
falling apart it's super hard to even
cut it look at this
guys look how tender it
is it just breaks
apart let's try a piece

it's so soft super super juicy all the
seasonings we added to it really gives
it a good taste and the smokiness flavor
in it is just amazing guys this is
perfect right here look at that just falls
apart it's amazing make sure you cook it to
to
195 to
203 because that's when the fat starts
tender okay and we're going to be right
back when we're ready to make the twoo
bowls okay guys we finally got
everything prepared it's raining outside
today so we're going to be making two
gold bowls we got our beautiful
vegetables right here

potatoes and let's start cutting the
beef brisket we're just going to make a
few tole plates on camera and then we're
going to do the rest off camera wow guys
look at this

amazing beautiful bark on it nice and
tender super super juicy look at this

juices okay now let's start preparing
the twole plates first let's put down some
