this video, we're going to do a two
course dinner in one pot in 10 minutes.

going to put all the info here. Uh, but
she has some fantastic information and

collaborating here for a couple videos
here in Montana. So, it's been really
fun to hang out
>> and uh to have a new friend to cook with.

>> And so, what we're doing here today is
we are doing two courses, one pot in 10 minutes.

>> Yep. We're we're doing it. So, we're
going to do a Trailgate snack and then
we're do a quick, easy, elevated dinner
>> as well.
>> I'm here for it.
>> Okay. So, for our Trailgate recipe here
today, we are making something a little
bit fancy. We are making a brie dip with
pesto and sundried tomatoes. And I'm
really glad you're here because I
probably shouldn't or do I need to eat a
whole wheel of brie. [sighs]
>> So, I'm glad that you're here to be able
to to share this.
>> Thank you for having me here. Cheese on
trail is my favorite and such a treat.
>> Mhm. So, we're going to get rolling in
our camp pot here. a little bit of water
cuz I want to thin it out. And I also
want to hydrate my sundried tomatoes.
You know, some come in a oil and that
can be fine, too, but they can get
pretty messy if you're packing them. So,
I like packing these dry ones.
>> And uh sundried tomatoes, you know,
they're they're having a comeback. They
had a big strong push in the late 90s,
but they are still a good thing and they
can be a really good ingredient to be
able to to pack along to add some quick
easy flavor.
So, just got our water and our sun-dried
camp stove burning and ripping. And I'm
going to add a pinch of salt.
Why not? And then I'm going to start to
prepare my brie. And so, I was curious
about this. Do you know how many
calories are in one wheel of brief?
>> I'm afraid to know.
>> Well, but sometimes you need those. >> Yeah,
>> Yeah,
>> cuz you've hiked the PCT. Like, you need
some calories. I don't know if it's all
cheese calories, but what is your guess?
Cuz I I actually didn't know we ate it
>> for the whole thing.
>> The whole thing.
>> 1,000 calories.
>> Close. It is 100 calories per serving.
And there are about eight servings in
here. 800 calories, folks. So, I don't
know if you want to take that down all
in one sitting or over the day.
>> Depends on how many miles I'm hiking
that day.
>> Yes. And [laughter] what kind of evening
you would like as well, depending on
many factors.
So, I typically bring like a hard cheese
out on trail with me, especially when
it's warm out because the hard cheese
tends to last a lot longer.
>> Bree I splurge on in the winter. That's
my winter cheese because it doesn't go
bad when it's cold out
>> for sure. And it still can last during
the summer time, but you're but but
you're right, it is a a softer softer
cheese and will will melt a lot a lot faster.

>> Oh my god. Uh, so Parmesan cheese or
aged cheddar is a a very very good
choice and that can make some nice dips,
too. But, uh, yeah,
>> I mean, don't get me wrong, I love every
kind of cheese. So,
>> yeah, for sure. But, you're right.
Taking it along in the winter time,
we'll have uh more more opportunity for success,
success,
>> for sure. So, we're already simmering
with our just a little bit of water. And
actually, you want to help me break this
in here? >> Sure.
>> Sure.
>> Do a little tag team cheese.
>> How big do you want the pieces? Oh, just
big old nugget size. They're all going
to melt anyway.
>> My goodness. [laughter]

>> Smells really good.
>> It smells really good. I haven't had
sun-dried tomatoes in a long time.
>> Oh, wow.
>> 800 [laughter]
calories of brief. Fantastic. >> Magical.
>> Magical.
>> And so, guys, you want to keep the the
heat nice and medium to medium low and
start to stir because you don't want
this to scorch on the bottom. And we are
just looking for this to get all melty.
That's food porn right there.
>> Mhm. [laughter]
>> Melted cheese.
>> Oh my god. Look at that. That looks so good.
good.
>> So, this is just going to take a few
minutes. And uh for each one of these
recipes, it's going to take about 5
minutes. So, really not that long to be
able to cook up a snack or a pretty darn
tasty trail meal.
>> Perfect. cuz when I'm on trail, I get
hungry and I don't want to spend a whole
lot of time making my food.
>> Yeah, for sure. So, while this is
melting, uh, why don't you tell folks

your stuff. And ladies, if you're

Awesome. So, I turned off the burner
because we've got enough heat in here
and we have achieved melt. Yes. So,
we're just going to add a little bit of
pesto that I packed in a little juice
shot container here. >> Cute.
>> Cute.
>> Pretty helpful.
>> Super smart.
>> Oh, yes.
>> Ooh, look at that. Food channel backount style.

>> Totally. [laughter] And if you can grab
the little uh bag of nuts there. Yeah.
>> For me. And I like to have a little
texture on there. So, just a little
sprinkle. Papitas, almonds, whatever
really. Like pine nuts could be great in
here, too.
But this is also a very nice seasonal
option. We have the red and green situation.

>> And pick your favorite cracker or some
bread and get dipping. Here you are.
>> Thank you.
>> Course one complete. Go ahead.
>> Oh yes.
>> Oh wow.
>> Oh yeah.
>> That's really good. No, I like your bite
is like super bad. Okay, I'll do a
bigger bite. I was trying to be like dainty.

>> No way. [laughter]
We're tailgating.
>> Oh my god. Look at that.
>> Round of applause.
>> Thumbs up for course one.
>> Oh my god.
>> Wow. If that's a first course, like I
can't wait for
>> So again, I'm very glad that you're here
cuz I could totally eat this whole thing
>> and I do not need to eat this whole thing.

>> Oh man, that's really darn good.
>> I really
>> Yeah, [clears throat] I really like the
nuts in there.
>> Also has some French >> tomatoes.
>> tomatoes.
>> Tomatoes. You also add some Frenches
fried onions on there. A little bit crispy.
crispy.
>> But um if you don't like brie, try goat
cheese. M.
>> But a goat cheese dip or a bree dip is a
great way to trailgate whether you're on
a day hike or having a great experience
when you get to camp. >> Mhm.
>> Mhm.
>> So, we're going to keep eating this,
clean out the pot a little bit, and
we'll come back for our second course.
Are you ready for course number two?
>> Heck yeah, I am.
>> Great. So, we are making a tuskcin or an
Italian palenta. And if you guys have
watched this channel any number of times
or any number of years, you know I love
Jiffy cornbread mix. If you've not
rehydrated Jiffy cornbread mix, instead
of making it into cornbread, you are
missing out. But one of the most popular
recipes of this whole year and last year
was the peanut butter and jelly grits
which you
>> you have tried and it still blows my
mind every single time you rehydrate
Jiffy. But I love taking it along
because this costs like less than a dollar.
dollar.
>> A quarter cup gives you a good solid
portion and it's super darn tasty. And
so other thing to to note for you guys
out there. So grits, palenta, and
cornmeal are all the same thing. They're
all just ground corn, different country,
different grind. and cornmeal goes into
the Jiffy cornbread mix with some other
flowers and some leavenning agents. So,
it's all pretty much the same thing. So,
if you can't find grits, look for
palenta. If you can't find palenta, look
for this. But one other tip I can give
you is don't get the 30 minute cooking
grits, like the really stone ground
Italian ones.
>> They're good for home, but don't take
them out on the trail. It's going to
you're just going to be sitting here for
a while and wondering why it's not
hydrating. And this is like you can find
this in every grocery store and probably
even like really small grocery stores
>> and gas stations too. It is available
everywhere. So I love having this for uh
the base for our tuskcen grits or tuskin
penta. So other ingredients we have is
we have some packable artichokes from
Trader Joe's that I found. Also packable
olives. We're bringing back those
sun-dried tomatoes, little bit of garlic
powder, a little bit of salt, Italian
seasoning, and some chili flake. And you
can easily prepack your spice mix if you
like. But just for sake of demonstration
of what we have, we have the ingredients
all laid out for us. And then we're
going to throw some Parmesan cheese on
top because we need more cheese.
>> Always more cheese.
>> Yes. All right, let's get cooking. >> Okay.
>> Okay.
>> And the ratio we are looking for for a
nice creamy palenta is 3 to1.
>> So three parts water to one part grit or
palenta. And
for our pot, we just did a a Hiker
Clean. Are you familiar with Hiker Clean?
Clean?
>> Uh yes. Are do you know the the soup? Yeah.
Yeah.
>> You make the hiker soup.
>> Yeah. I I I I'm drinking that on the
channel and people like freak out, but
sometimes that's all you have.
>> Yeah. You do what you got to do when
you're out there.
>> You do what you got to do. But yeah,
hiker clean for this cuz it's similar
flavors. And sure, we'll throw a little
bit of Bri in here. It'll be great. So,
pinch of salt,
and if you want to grab that chili flake
for me.
>> Oh, chili. Yep. And just do a little
pinch in there. We'll throw some Italian seasoning
seasoning
and basically
>> Yeah, we'll go for there. We can always
add some more and throw in some sundried tomatoes.
